You will need: 300g baby potatoes, 2 carrots, 200g purple sprouting, 1 leek, 1 squash, cauliflower, 500ml milk, 1 onion, 2 garlic cloves, Ruby Junes Rogan Josh curry sauce, sea salt, black pepper, oil

For 2 - 4 people
Peel and chop up the squash, and halve the potatoes. Slice up the onion, garlic, leek, carrots, and purple sprouting. Fry the onion and garlic for a few minutes in oil until softened. Add in the leeks, carrots, squash and potatoes and stir to coat in oil and cook for a few minutes. Add in the curry paste and 350ml of milk and stir together. Leave to simmer for 30 minutes, stir occasionally to make sure it doesn’t burn. If it becomes too thick add a little more milk or water. Add the purple sprouting for the final 5 to 6 minutes.
Meanwhile grate the cauliflower in to a microwavable bowl. You will probably only need half. Cover with cling film and microwave on high for 7 minutes.
