Tor's Simple Chicken Casserole Recipe


Tor's Simple Chicken Casserole Recipe This is perfect as a mid week family meal. Bung in the oven and go to swimming/football/gym lessons. When you get home dinner is ready - what could be easier?!

You will need: 4-8 chicken thighs (skin on is fine), 1 onion, 2 garlic cloves, tomato purée, 2 tins of chopped tomatoes, Worcestershire sauce, splash of red wine, SML spoon of sugar, salt, pepper,  a squeeze of lemon juice and some basil.


TO MAKE:
1. Brown chicken in a pan in sunflower oil in an oven proof dish with a lid.Use a decent amount of oil so the chicken browns and doesn't burn - I always used to make this mistake! After about 5 minutes put the chicken aside.
2. Remove some of the oil and fry  the chopped onions until softened - about 5 minutes on a low heat, add the chopped garlic and fry for another minute.
3. Add a decent squeeze of tomato purée, splash of red wine, stir and leave for couple of minutes. Add two tins of chopped tomatoes, a drizzle of Worcestershire sauce, season, tsp of sugar and allow to heat through.
4. Add the chicken and some water so the sauces almost covers the chicken.
5. Put in oven for about 1.5 hours at 160. When I got home I added some more pepper and a squeeze of lemon and left it in the oven while I cooked some rice.
5. Service with rice, pasta or potatoes with fresh basil. My kids had  some grated Parmesan on top of theirs.
