Swede and Bacon Pies


Swede and Bacon Pies 6 slices of back bacon with most of the fat trimmed off 1 onion chopped 1 large swede, peeled and chopped 1 carrot, peeled and sliced 400ml chicken stock 4 large potatoes, peeled and halved A small handful of chopped parsley Small handful of grated hard cheese

Brown the bacon in a pan. Remove, and then brown the onions in the same pan. Return the bacon to the pan with the carrot and swede and season well. Add the chicken stock and cook for 5 minutes. Meanwhile cook and mash the potatoes. Add most of the parsley to the bacon and swede. Divide mixture between 4 pie dishes. Top with mash and sprinkle cheese and parsley over the top. Grill until the potato starts to brown.
