Stir fried chicken and veg


Stir fried chicken and veg Skin your chicken and cut the meat off the bone. Mix in a bowl with a marinade - use a ready made sauce or make your own.  You can make a simple marinade with a tsp of honey, 1 tbsp each of hoi sin and soy sauce, a handful of salted cashew nuts and half tsp of cornflower to thicken it.

Stir fry the marinated chicken (make sure you have put all the sauce in), add sliced onions, broccoli, carrots, leeks or any other suitable veg!  Quickly stir fry.  If you want extra greens then in the last couple of minutes you can add some shredded greens, cabbage or spinach.  Serve with rice or noodles.
