Spicy Swede Fritters


Spicy Swede Fritters 1 swede, peeled and cubed 75g plain flour 1 egg 100ml Creme Fraiche 1 onion, finely chopped 1 red chilli, deseeded and finely chopped 1 tsp cayenne pepper 2 tsp garam masala Half tsp ground turmeric 1 tsp crushed coriander seeds Small handful chopped coriander leaves Sunflower oil for frying Mango chutney to serve

Cook the swede in a pan of boiling water for about 15 minutes until tender. Combine the flour, egg, and Creme Fraiche to make a smooth thick batter. Stir in the spices, onion, chilli, and coriander and season well. Roughly mash the swede and add to the batter.

Heat a splash of oil in a non-stick pan and fry flattened spoonfuls of the mixture until golden-brown, about 2 minutes each side. Serve hot with mango chutney.
