Roast Chicken, Fries, and Coleslaw


Roast Chicken, Fries, and Coleslaw You will need: 2 chicken legs, 2 large potatoes, 2 carrots, 1 onion, 1 celeriac, tub mayonnaise, olive oil, salt, pepper, lemon juice

It will take: 35 minutes

Grate the carrots, slice the onion, and peel and cut in to thin strips of celeriac. Stir together in a bowl and add seasoning and a squeeze of lemon juice. Mix together well with the mayonnaise.
Peel and cut your potatoes lengthways to give lots of thin chips. Heat oil in a large pan and when hot put the chips in and cook for 4 minutes. Take out (they will not be cooked yet!), drain and put aside to cool down completely.
Preheat the oven to 200C. Season the chicken legs with salt and pepper, drizzle over a little oil. Roast in the oven for 35 minutes.
Heat your chip oil again – put the part cooked fries back in to the hot oil until golden brown and crispy!
