Pork chops, roasted carrots and potatoes


Pork chops, roasted carrots and potatoes You will need: 2 pork chops, a tub of apple chutney, 4 carrots, 400g baby potatoes, dried mixed herbs, olive or rapeseed oil, sea salt, black pepper

It will take: 35 minutes

Preheat the oven to 200C. Drizzle oil over a baking tray and put in the oven to heat up. Wash the potatoes, add in to the hot oil in the baking tray and put in to the oven to roast for 30 minutes.
Top and tail the carrots and cut lengthways in half. Mix with a little oil and the herbs and add in to the potatoes halfway through their cooking time. Make sure you mix it all together and get the potatoes turned over.
Pan fry the chops of 6 – 8 minutes on each side making sure the fat along the edge browns well.
Serve the chops with the apple chutney and the roasted veg.
