You will need: cooked sausages sliced, 1 sliced leek, handful of shredded chard (you can also use kale), 100g cheese, 50g butter, 40g flour, 500ml milk, salt and pepper, pasta
It will take: 30 minutes
Make a white sauce by melting 50g of butter in a saucepan, add 40g of flour and stir in well. Cook off the paste (roux) for a few minutes and then slowly whisk in the milk. Continue to whisk the sauce over the heat for 2 minutes until it begins to thicken, then remove from the heat and stir in a large handful of grated cheese.
Cook your pasta as normal.
Gently fry the leeks in a little oil until softened, add the cheese sauce, a teaspoon of mustard and the sliced sausage. Use to top the cooked pasta and finish off with some more grated cheese. Serve with salad and crusty bread.
