Cheese & leek omelette


Cheese & leek omelette You will need: Davidstow cheddar, leek, 5 eggs, milk, 1 onion, oil, salt and pepper

It will take: 20 minutes

Method

1. Thinly slice one onion and one leek gently fry in a little oil in a large ovenproof frying pan until softened set aside.

2. Grate 150g of cheese. Whisk 5 eggs together in a bowl with 150ml of milk and season.

3. Pour half the egg mixture in the frying pan, scatter over half the leeks, onions and cheese.

4. Cook on the hob until the bottom is cooked and then fold in half and flip over to finish. Repeat for the second omelette. Divide the omelettes in to four servings and serve with a green salad and chips.
