Delicious, comforting and easy to make pudding. And a great way to use up stale bread!

You will need:
approx. 8 slices white bread (a few days old)
3 eggs
2 tbsp. single cream
half pint milk
butter
2 tsp cinnamon
2 tsp mixed spice
a large handful currants
a large handful sultanas
1 large spoon golden caster and Demerara sugar
To make:
Cut the crusts off your bread. Butter the slices and cut in to triangles. Layer in a baking dish, scattering with sugar, currants, and sultanas. Scatter over the cinnamon and mixed spice. Whisk up the eggs, milk and cream together. Pour over the bread and scatter the top with sugar. Leave to soak for at least half an hour. Bake in the oven for 30 minutes at about 180C - you might need to cover the top with tin foil to stop it burning.
