You will need: 3 beetroot, 2 onions, shortcrust pastry, butter, sea salt and black pepper, 3 eggs, milk
It will take: about 40 minutes
Method
1. Use your shortcrust pastry to line a 25cm flan tin and put in the fridge to chill.
2. Slice the onions and put in a pan with a knob of butter and cook until softened.
3. Peel and grate the beetroot and put in to the pastry case with the cooked onions.
4. Beat together 3 eggs and 250ml of milk, season and pour in to the pastry case.
5. Bake in the oven for 30 minutes at 170C.
